Can I prep these pinwheels in advance?

You can definitely make these pinwheels in advance if you want. You can also keep them in the refrigerator rolled up and ready to be sliced!

I usually try and use them within a day or so of making them because the tortillas will eventually get soggy but for the most part they will hold up if you need to make them a bit further ahead than the 1-2 hour chill time!
