Can I make beef fajitas on the grill? 

When those warmer spring and summer nights roll in we make as much as possible on the grill! It’s a great way to spend some time outdoors and you just can’t match those delicious grilled flavors in the house on the stove or in the oven.

What kind of beef should I use to make steak fajitas? 

Making fajitas is super easy and thanks to the delicious cilantro lime marinade you can use just about any cut of beef and still end up with a tasty result. We usually use an inside skirt steak or flank steak because they’re thin, easy to slice, and they grill up quickly. 

You can use other kinds of beef steaks as well, I’d just make sure to slice them thinly if possible or pound them out with a meat tenderizer so that they’re grilling up quickly while also being thin enough to absorb the marinade well. 

If you end up buying a Costco-sized flank steak and can’t fit it all on your grill, consider making homemade beef jerky with some of it!

What do I need to make cilantro lime beef fajitas? 

  • fresh lime juice
  • onion
  • garlic
  • fresh cilantro
  • cumin
  • salt
  • olive oil
  • butterflied inside skirt steak or other thin steak such as flank steak

You may also like to grill the following with it, but don’t marinate these:

  • bell pepper – any color
  • Onion

How to make beef fajitas on the grill: 

  1. Combine all ingredients in a zip top bag and refrigerate for 3-24 hours.
  2. Knock off most of the loose pieces of marinade off the steak before cooking.
  3. You can cook this on a cast iron grill pan with your exhaust fan running and the smoke isn’t too bad since there’s no sugar. Or, cook on an outdoor grill.
  4. Preheat your cooking surface with medium high heat.
  5. Cook about 2 minutes per side, or until cooked all the way through.
  6. Serve with tortillas and your choice of toppings: grilled onion, grilled bell pepper, salsa, sour cream, diced tomatoes, avocados or guacamole, corn, refried beans, rice, shredded cabbage, etc.

I don’t like onions, what else can I serve with my beef fajitas? 

The great thing about making beef fajitas is that they go so well with different vegetables, sides, and toppings. These cilantro lime beef fajitas are the perfect base for my corn salad recipe.

If you don’t like onions you can leave them out of your recipe and try topping your fajitas with corn salad, salsa, guacamole, sour cream, or even some plain greek yogurt! 

How long does my steak need to marinate? 

Give the marinade at least three hours to work best and really penetrate the meat. You can marinate the steak for up to 24 hours though so feel free to put this all together the night before or even the day before!

These beef fajitas make an excellent meal prep idea since they’re easy to make and can be prepared well in advance.  
You can over marinate meat so you don’t want to leave your steak sitting in the marinade for more than 24 hours, this can actually make the meat more tough!

If you marinate in advance and realize you won’t be able to use them in time just throw the meat on the grill and reheat it when you’re ready to make your steak fajitas.

I think the leftovers are just as tasty so an extra day in the fridge once they cooked won’t diminish the flavor or tenderness.

I’m not a big fan of cumin, should I leave it out? 

You certainly can leave it out, but I would suggest giving it a try with the cumin. It really brings all the flavors together and doesn’t stand out on its own in my opinion. If you typically don’t like cumin you might be surprised by this recipe! 

Can I cook my beef fajitas on the stove? 

There’s no sugar in the marinade recipe so you can definitely make this indoors without too much smoke. I’d recommend using a cast iron skillet or a grill pan so that you still get those great grilled flavors to go with your fajitas!

Ingredients

  • 1/4 cup lime juice (about 3 limes)
  • 1/2 an onion, chopped
  • 1 1/2 tsp chopped garlic (about 3 cloves, or use jar garlic)
  • 1/2 cup chopped fresh cilantro
  • 1 tsp cumin
  • 1 tsp salt
  • 2 Tbsp olive oil
  • 1 lb butterflied inside skirt steak or other thin steak such as flank steak
  • You may also like to grill the following with it, but don’t marinate these:
  • Large strips of bell pepper – any color
  • Onion - cut into quarters from stem to root rather than crosswise
