Ginger Carrot Soup Recipe

This easy ginger carrot soup recipe is fresh, delicious, and super simple to make. If you want to try a homemade soup recipe that is a little more unique, this is the one!

I know some people are really sensitive to ginger so I wanted to make sure you know that this ginger carrot soup is not overly sharp.

Ginger can be overwhelming so feel free to add a smaller amount if you are afraid it’s too much! I think you’ll find it’s the perfect balance for the carrots.

Here’s what you’ll need to make this tasty ginger carrot soup:

You can use dried or powdered ginger if you don’t have access to the fresh ginger. It does add a little bit of a better flavor with the fresh ginger but it’s not going to ruin the recipe if you need to substitute the dried variety!

  • extra virgin olive oil
  • sweet onion
  • garlic
  • ginger
  • fresh thyme
  • carrots
  • red bell pepper
  • sea salt and black pepper
  • vegetable broth
  • heavy cream

How to make the best carrot soup:

  1. Heat olive oil in a large, high-sided skillet over medium heat. Add onion, garlic, carrots, and bell pepper. Season with salt and black pepper, to taste, and cook, stirring frequently, until vegetables become soft and translucent, approximately 5 minutes.
  2. Add vegetable broth, minced ginger, and thyme leaves and stir to combine. Cover and cook until the carrots are fork tender, approximately 10-15 minutes. Stir once or twice while cooking.
  3. Remove from heat and puree mixture with an immersion blender until smooth. (A regular blender or food processor can also be used for this step). Taste and adjust seasonings, as desired.
  4. Return to medium heat and add heavy cream. Stir until barely combined and cook until heated through, approximately 1-2 minutes. Remove from heat and serve immediately. Enjoy!

What to serve with this homemade soup:

I like to serve this ginger carrot soup with a salad or some crusty bread. It is also great with some crackers to add on top.

  • 2 Tbsp extra virgin olive oil
  • 1 small sweet onion, diced
  • 3-4 cloves garlic, minced
  • 1½ lbs. carrots, diced
  • 1 medium red bell pepper, diced
  • sea salt and black pepper, to taste
  • 3 cups vegetable broth, preferably organic
  • 1 Tbsp fresh ginger, minced
  • 2 tsp fresh thyme leaves
  • 1/3 cup heavy cream
