For me, baking needs to be at least a little bit fun. There’s nothing worse than spending the whole day in the kitchen for something boring like cleaning or arranging cabinets. With these cookies for summer I know we’ll get to have fun in the kitchen and the end result is tasty too!

What are summer cookies?
All of the recipes in this collection are fun, summer themed cookies. We’re talking fruity, fresh, flip flops and flowers. Cookies that you’d love to find on a grazing table at a picnic or backyard BBQ, that sort of thing.
Technically you could make any of these recipes all throughout the year, do you, no judgement here! But mostly I was looking for cookies that just felt like summer. Even if you can’t get away on a real vacation this year you can bring the flavors and feeling of summer into your life with these tasty treats.
What are some baking staples I should have on hand for these fun summer cookies recipes?
You should always have things like flour, baking soda, sugar, powdered sugar, butter, and vanilla on hand when you plan to do a lot of baking.
Some others are things like chocolate chips, food coloring, eggs, milk, and even bananas. Applesauce is a good replacement for things like oil and eggs when baking so keep some of that on hand too in case you run out of a staple ingredient.
For these cookies for summer you should also have some fun cookie cutters on hand, baking sheets, and even parchment paper and cooling racks will come in handy.
A kid or two to do some taste testing wouldn’t be bad either!
