Is this a gluten free summer salad?

The only thing that is not gluten free on this summer salad is the croutons. You can us gluten free bread or bagels to make them tho so it’s an easy swap to make if you need to cut out gluten!

Everything else in the salad, including the dressing, is naturally gluten free which is awesome if you have allergies in your house or avoid gluten for personal reasons.

What to serve with summer salad?

This light meal has protein from the hard boiled eggs and bacon, along with the delicious fruit and vegetables. It’s delightful to serve on its own, maybe with a summertime drink like strawberry mint lemonade.

What do I need to make this summer salad recipe for dinner?

For the croutons you will need bagels and olive oil. For the dressing you will need plain greek yogurt, olive oil, everything bagel seasoning, lemon juice, salt/pepper, and water if needed to thin it to your desired consistency. 

The salad ingredients are mixed greens, cherry tomatoes, avocado, blueberries, walnuts, and hard boiled eggs.

How to make summer salad:

Preheat oven to 350 degrees and line a baking sheet with parchment paper 

making croutons

Toss bagel pieces in olive oil and bake 10-12 minutes until crispy, set aside

Whisk dressing ingredients together until well combined, set aside

Croutons

  • 1 bagel, cut into small pieces
  • 2 Tablespoons olive oil

Salad

  • 3 cups mixed greens
  • ½ cup cherry tomatoes, halved
  • 2 bacon strips, cooked & crumbled
  • ½ avocado, diced
  • ¼ cup blueberries
  • 2 tablespoons walnuts, chopped
  • 1-2 hard boiled eggs

Dressing

  • 4 Tablespoons plain Greek yogurt
  • 1 Tablespoon olive oil
  • 1 Tablespoons everything bagel seasoning
  • 2 Tablespoons lemon juice
  • Salt & pepper
  • Water, to thin dressing as needed

Instructions
