What is a twice baked potato?

Twice baked potatoes like these loaded twice baked potatoes are potatoes that are first baked, then the filling is scooped out and blended with some other ingredients before being reloaded back into the potato shell and baked a bit longer.

It makes for a little boat of loaded mashed potato goodness that everyone will devour. It’s a great way to make loaded baked potatoes that are a little easier to eat and presentable for parties, gatherings, etc.

What ingredients do I need for loaded twice baked potatoes?

To make these super easy loaded baked potatoes with bacon you’ll need some simple ingredients. Check out this shopping list and get the full amounts in the recipe card at the bottom of this post.

You will need some medium sized potatoes, I usually choose new potatoes or russet potatoes since they bake really well and have a creamier texture. You will also need butter, sour cream, cheddar cheese, cooked bacon, chives, and salt and pepper to taste.

That’s actually everything you’ll need. You can use as many potatoes as you need. Keep in mind that you’ll be cutting them in half so try to choose potatoes that are shaped evenly so you can keep the halves pretty even!

How to make twice baked potatoes:

Bake the potatoes in the oven or microwave until fork tender 

Cut potatoes in half lengthwise and let cool just a little

Scoop out the potato from the skin and place it into a medium size bowl – be careful to keep the skins intact

Mix in the butter, sour cream, cheese, bacon, and chives into the potatoes until well combined 

The filling is prepped and ready.

Spoon the mixture into the potato skins and top with a little more cheese and bacon

Warm in the microwave or in the oven at 400 degrees for about 15 minutes

Garnish w/ chives, serve & enjoy!

How to bake potatoes:

First you’ll want to wash the potatoes really well. You don’t want the skin to be dirty and since we’re leaving the skin on we’ll want it to be clean! Use a scrubbing brush and some cool running water to get them nice and clean.

Next, preheat the oven to 425°F and line two baking sheets with parchment or silicone baking mats.

Use your fork to pierce some holes into the skin of each potato before rubbing lightly with olive oil. Sprinkle the potatoes with some sea salt and bake on the prepped trays for about 45 minutes.

The potatoes are done when they are fork tender or mostly soft to squeeze with an oven mitt.

You can also make the potoates in the microwave. Most microwaves have a potato button which is an easy way to make them quickly.

Still clean them really well and pierce the skin with a fork in a few places before putting them into the microwave for about 4 minutes each.

  • 2 tablespoons butter
  • ½ cup sour cream
  • ½ cup cheddar cheese, shredded
  • ½ cup bacon, cooked & chopped
  • 2 tablespoons chives
  • Salt & pepper to taste

Instructions
