We enjoy eating this as a crustless quiche but if you want to make it a little more substantial it's easy enough to dump it all into a whole wheat pie crust!

Here's what you'll need to make an bacon asparagus quiche:

This recipe is really quite simple. There's nothing crazy happening here, all of these ingredients are readily available and makes this quick dinner or brunch recipe come together perfectly.

  • 4 strips bacon
  • 16 stalks asparagus, trimmed, cleaned and cut into bite-size pieces
  • 2 cloves garlic, minced
  • 2 cups fresh spinach, sliced or torn into smaller pieces
  • 6 eggs, lightly beaten
  • 1 cup milk
  • 1 cup shredded sharp cheddar cheese
  • 1/2 cup grated Parmesan cheese
  • salt and pepper, to taste

Can I make substitutions to this recipe?

You can make substitutions to the ingredient list if you need or want to. As I mentioned above you can pour the entire mixture into a whole wheat pie crust instead of making this crustless.

Another substitution you can make is to use ham or another meat in place of the bacon.

If you want to use different types of cheeses feel free to do that as well. Either way it'll be a cheesy delicious dish that everyone will love.

How to make bacon asparagus crust:

This recipe can be on the table in about 30 minutes. It's quite easy to put together so if you have kids who like to help in the kitchen this is a great recipe for them!

  1. Preheat the oven to 400.
  2. Prepare a 9-inch pie plate with nonstick cooking spray.In a skillet, cook the bacon until browned.
  3. Remove from pan and drain on paper towels, leaving about 1 Tbsp of bacon fat in pan.
  4. Add the asparagus to the skillet and saute until tender, about 5 minutes.
  5. Add the minced garlic and saute until lightly browned, then add the spinach to wilt it.
  6. Remove from heat.In a large bowl, combine the eggs, milk, vegetable mixture, cheeses, salt and pepper.
  7. Pour into the prepared pie plate.
  8. Bake at 375 for 30-35 minutes or until the edges of the crust are golden.

Truly this recipe is great year round! It goes great for a lovely brunch with girlfriends, don't you think?

Yeah, that never seems to happen as often as we'd like…So I just make “breakfast for dinner” and enjoy my brunch that way.
