Recipes that use no breadcrumbs for meatloaf can sometimes be a bit tricky. They get too soft, don’t hold their shape, end up being a meat pudding situation, you get the picture. Not the case with this recipe, I’ll show you my secret ingredient below!

Why would I want to make meatloaf with no breadcrumbs?

There’s lots of reasons for needing a no breadcrumb meatloaf recipe. Gluten intolerance is a big one (and the main on in our house) but you can also use this recipe if you don’t have breadcrumbs on hand and don’t feel like going through the hassle of making your own, running to the store, etc.

You probably already have a lot of things in your kitchen you can use as a binder for meatloaf. I’m going to show you how I make meatloaf with no breadcrumbs that comes out perfectly every time!

What do I need to make this no breadcrumb meatloaf recipe?

To make this tasty meatloaf we will be using ground beef or turkey, you can use either, I use whatever I have on hand! We will also use green bell peppers, red bell peppers, celery, carrots, onion powder, Worcestershire sauce, ketchup, quick oats, egg, and salt/pepper to taste!

That’s all! It’s really easy to put together and super simple to gather these easy to find ingredients at your favorite grocery store.

Are quick oats the same as old fashioned oats?

No! Quick oats are not the same as old fashioned oats or steel cut oats. You can use your food processor to bread down old fashioned oats so that you can use them as quick oats though.

You will just want to pulse them in the blender or food processor to break them up into smaller pieces. This is a great way to make them into more of a breadcrumb size piece for use in no breadcrumb meatloaf recipes like this one!

Are all oats gluten free?

No, they are not all gluten free. It will depend on how and where they are processed usually. If you need to make sure the recipe is completely gluten free be sure to double check all of your ingredients for hidden gluten, that includes the oats!

You can easily find quick oats that are gluten free tho, so don’t be discouraged. Most varieties that I’ve used have been gluten free but just double check the ingredients list before buying or using!

How to make meatloaf with no breadcrumbs:

Preheat oven to 400 degrees

In a small bowl whisk together the ketchup and one tablespoon of the worcestershire sauce, set aside 

meatloaf ingredients in a bowl

In a large bowl, stir together all remaining ingredients until well combined 

mixture ready to be formed and baked.

Prepare a baking dish with nonstick spray

Place the meat mixture in the baking dish and form and even, oval shape 

meatlaof in a pan ready to have sauced added

Bake for about 30 minutes until cooked through

Remove from oven and cover with set aside sauce

Return to oven for an additional 10 minutes

Ingredients

  • 1 ½ lbs ground beef or turkey
  • ¼ cup green bell pepper, diced small
  • ¼ cup red bell pepper, diced small
  • ¼ cup celery, diced small
  • ¼ cup carrot, shredded fine
  • 1 tablespoon dry onion
  • 3 tablespoons worcestershire sauce
  • ½ cup ketchup
  • Salt and pepper to taste
  • 1 cup quick oats
  • 1 egg, beaten

Instructions

  1. Preheat oven to 400 degrees
