Quiche Lorraine Recipe | Bacon Swiss Quiche

This easy and delicious quiche lorraine recipe is great for brunch, easy dinners, and more. It’s a multipurpose dish that everyone will enjoy! It’s also an easy way to enjoy egg recipes for dinner.

You won’t want to miss out on this bacon swiss quiche recipe that is loaded with flavor but super simple to prepare. It might look and sound fancy but this is a quick meal that I make for my family frequently, even on those busy weeknights.

Quiche makes a great anytime kind of meal. You can serve it for breakfast as a savory option or you can eat it for lunches and even dinners. It makes a great addition to brunch menus as well.

Recipes like bacon swiss quiche are also excellent to serve when you need a boost of protein but don’t really feel like eating or preparing meat! Another reason we love to serve quiche is the prep time. It’s super simple to prepare and it only needs about 20 minutes of prep time.

What is Quiche Lorraine?

Quiche Lorraine is named after the Lorraine region of France. Quiche actually comes from a medieval kingdom that was under German rule but the classic dish was later changed and enhanced by the French who renamed the dish.

The French actually called the dish Lorraine and later it was called Quiche Lorraine, it was around this time that cheese was incorporated into the recipes for this classic ‘egg pie’.

Typically Quiche Lorraine uses things like eggs, cream, and lardons to create an open pie that has an egg custard filling. Today, we incorporate all kinds of things into our quiche recipes.

This particular recipe uses bacon and Swiss cheese to create a delicious egg quiche that everyone will devour without complaint!

Is this Quiche Lorraine recipe crustless?

My version of a Quiche Lorraine recipe is not crustless. If you wanted to make it crustless you definitley could. Pull some tips from these crustless quiche recipes that I’ve shared in the past:

It’s a great idea to make a quiche crustless if you are on a gluten free diet or a low carb diet. Everything else in the recipe is relatively low carb so by omitting the crust we make this recipe into a delicious keto friendly dish.

What do I need to make a bacon swiss quiche?

For this recipe we will use a frozen pre-made pie crust. The filling is eggs, half and half, bacon, onion, mushrooms, spinach, and shredded Swiss cheese. We will season the mixture with salt, black pepper, and thyme!

These ingredients are all easy to grab on your next grocery run and if there’s anything in there that you really don’t like it’s pretty simple to swap it out for something else. You can leave out the mushrooms if you really dislike them, etc.

Quiche are remarkably accommodating and you can add in other ingredients like peppers, spinach, etc. anything you like can probably make an appearance without disrupting the recipe too much!

How to make an easy Quiche Lorraine recipe:

Preheat the oven to 375F.

Cook bacon until tender and lightly crisp. 

In a bowl whisk together: eggs, salt, pepper, and thyme.

Slow stir in half and half.

Layer the onion, mushrooms, spinach, bacon, and cheese in the frozen pie crust.

Pour egg mixture over the top of the filled crust.

Bake for 45-50 minutes or until a knife in the center comes out clean and the top is starting to brown.

Allow quiche to sit for 15 minutes before serving.

Notes for making the perfect quiche recipe:

If needed, cover your pie crust edges with aluminum foil or crust shields if the crust starts to darken on the edges before the middle is done. 

If desired, turn on the broiler for the last few minutes of cooking to brown the top. Watch carefully to prevent burning. 

The pie crust needs to remain frozen until ready to use. Do not thaw it out ahead of time in preparation for making this recipe.

Ingredients

  • 1 pre-made frozen pie crust, uncooked
  • 4 large eggs, beaten
  • 1 1/4 cup half and half
  • 8 slices bacon, chopped
  • 1/4 cup yellow onion, finely diced
  • 1/4 cup mushrooms, sliced
  • 1/4 cup spinach, chopped
  • 1 cup shredded Swiss cheese
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon ground thyme

Instructions

  1. Preheat the oven to 375F.
