You can let this one chill in the refrigerator for a little longer if necessary which is nice if you like to prep things in advance. Remember that after a day or so the tortillas will start to get a little soft or soggy from the moisture so be sure to prepare only the amount you’ll eat pretty directly.

Can I make these tuna pinwheels gluten free?

If you have a gluten free tortilla option that you really like, feel free to swap them out for the flour tortillas. Everything else in the recipe is naturally gluten free so you don’t have to worry about that.

The thing about gluten free tortillas is that they can be very flaky and fall apart easily so be sure to test one out before you commit to a full batch. There are some good options out there, I like the Mission brand ones that you can find at Walmart.
